Nitrite content in meat products from the Serbian market and estimated intake

Abstract The aim of this study was to determine levels nitrites in some meat products sold on the Serbian market over a period 3 years (2018-2020) and compare results with maximum residue as well discuss dietary exposure adult population nitrites.A total 1291 product samples, produced by industry or imported (509 dry fermented sausages, 37 semi-dry 451 finely minced cooked sausages 294 coarsely sausages), were obtained from retail during 2018-2020.Higher mean nitrite content, expressed NaNO 2 , found (40.35 mg kg -1 33.75 minced) compared (1.86 1.83 fermented).The average nitrites, ion, for varies 0.001 0.015 body weight (BW) day far below European acceptable daily intake (0.07 BW ). In conclusion, concentrations all established permitted (national European), indicating that use food additive Serbia is generally line existing regulations.
